100g beurre noisette
2g sel
50g miel
160g blancs d’œufs
70g sucre glace
Zestes d’orange
50g poudre d’amandes
50g farine T55
Utilisation
Gâteau individuel
Fond d’entremets
Déroulé
Réaliser le beurre noisette, saler, filtrer
Ajouter le miel pour stopper la cuisson, laisser refroidir à 35-40°C
Monter les blanc d’œufs mousseux, ajouter le sucre glace
Ajouter les poudres puis le beurre noisette
Réserver au frais 2h pour faciliter le pochage
Mettre en poche, remplir les moules
Enfourner 15-16 mn à 220°C (th. 7/8) puis 200°C (th. 6/7) et baisser à 190°C (th. 6/7)
Une légère coloration doit être visible sur le pourtour
