Ingrédients
13g de thé earl grey
25g d’eau
55g de sucre
45g de pâte d’amande crue à 50%
1 citron jaune
33g de miel d’accacia
135g d’oeuf
100g de farine T55
3g de levure chimique
110g de beurre tiède
Déroulé
Faire infuser le thé
Mélanger au robot pâtissier muni de la feuille le sucre, la pâte d’amande ramollie et les zestes de citron
Incorporer au fouet petit à petit le miel, le thé et les oeufs jusqu’à obtention d’un appareil crémeux
Ajouter la farine tamisée avec la levure puis le beurre tiède
L’ensemble doit être lisse et homogène
Beurrer et fariner les moules. Remplir avec l’appareil. et enfourner à 160°C (th. 5/6) pendant environ 30mn
Démouler à froid sur une grille
