Quelques dates importantes de l’histoire de la cuisine française. Cette liste n’est pas exhaustive et pourra être amenée à évoluer au fil du temps…
1900 : parution du premier guide Michelin.
1903 : la cuisine se codifie grâce à Escoffier.
1907 : parution du Guide Culinaire écrit par Escoffier.
1918 : parution du Répertoire de la Cuisine par Gringoire et Saulnier.
1924 : création du concours « Un des Meilleurs Ouvriers de France » par L. Klotz.
1926 : commercialisation du premier réfrigérateur aux Etats-Unis.
1933 : la mère Brazier à Lyon obtient les premiers 3 macarons au guide Michelin.
1938 : première parution du Larousse Gastronomique de Prosper Montagné préfacé par Auguste Escoffier et Philéas Gilbert.
1951 : Alexandre Dumaine obtient 3 macarons pour son restaurant La Côte d’Or à Saulieu.
1958 : ouverture des premières écoles hôtelières.
1970 : suite à la parution du guide Gault et Millau, un mouvement appelé la nouvelle cuisine apporte les dressages à l’assiette, une cuisine moins lourde et les produits régionaux reviennent en force.
1985 : apparition de nouveaux concepts de production : cuisine sous-vide, cuisson basse température, cuisine d’assemblage avec les produits de 4ème et 5ème gamme. Le matériel évolue également avec l’apparition des fours mixtes, cuiseurs vapeurs haute pression, plaques à induction, micro-onde.
1990 : grosse progression de la restauration rapide et de la restauration à thème.
1995 : l’arrêté du 5 mai fixe de nouvelles règles en matière d’hygiène en restauration, et propose de suivre la démarche HACCP.
1997 : nouvel arrêté sur la règlementation en restauration collective et commerciale (27 septembre).
1907 – Le Guide Culinaire (Aide Mémoire de Cuisine Pratique) par A. Escoffier – 1247 pages
1984 – Ferran Adria devient le Chef du El Bulli à Rosas.
1993 – Les Secrets de la Casserole par Hervé This (chez Belin 222 pages) Premiers pas de la « Cuisine Moléculaire.
Juillet 1992 – Premier Colloque de Hervé This où il invente le mot « Cuisine Moléculaire ».

😉 oui mais Marx (je ne me souvient plus exatement comme il s’appelle), Gagnaire, et le chapeau pointu de la haute savoie qui n’arrête pas de faire des dépôts de bilan s’en sont inspiré un max pour continuer ensuite avec leur propres ailes. Le véritable dernier novateur pour moi c’est celui qui est même allé à faire de la cuisine en mettant ses pianos sur scène dans un théâtre. Mais tu dois savoir de qui il s’agit. 🙂
